Mangiamo due spaghetti! That is a phrase we hear a lot in Lisa’s Italian Kitchen. Literally meaning “Let’s eat two spaghetti!”, the phrase is a way of communicating a craving for spaghetti in an elegant way. This recipe is perfect for a weeknight when you’ve been at the office all day and are craving a plate of pasta or for a Sunday where you’d rather spend less time in the kitchen and more time around the table with your family. Lisa’s Spaghetti with Toasted Breadcrumbs, Lemon, and Anchovy Paste Ingredients:

Spaghetti with Toasted Breadcrumbs

1 pound spaghetti

2 cups Italian seasoned breadcrumbs

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup Extra Virgin Olive Oil

3 tablespoons anchovy paste

6 cloves garlic, smashed

3/4 cup lemon juice

4 tablespoons unsalted butter

The zest of 1 lemon

1 teaspoon crushed red pepper

Lisa’s Spaghetti with Toasted Breadcrumbs, Lemon, and Anchovy Paste Directions:

Spaghetti with Toasted Breadcrumbs

In a frying pan, place the olive oil and butter until the butter melts. Add the breadcrumbs, smashed garlic and crushed red pepper, and salt and pepper. Sauté until the breadcrumbs are golden. Set aside.

 

Meanwhile, cook the pound of spaghetti according to packaged directions. Place the cooked spaghetti in a large serving bowl. Toss with the breadcrumb mixture. Add the lemon juice, lemon zest, and 3 tablespoons of anchovy paste.

 

(Anchovy paste is a matter of personal taste- if you like your pasta saltier add more!) Serve and enjoy!
