Lisa’s Ooey-Gooey Mushroom Lasagne

Mushroom Lasagne

This is a wonderful recipe for rich, decadent Northern Italian lasagne! Full of creamy, velvety Besciamella sauce, sautéed mushrooms, and delicious Fontina and Parmigiano cheeses. While this is a perfect dish to serve in the Fall, it’s also wonderful to serve in the Spring, when mushrooms are plentiful.

Lisa’s Ooey-Gooey Mushroom Lasagne Ingredients:

1 1/2 lbs imported lasagne

2 cups Besciamella

4 cups sliced mushrooms, sautéed

2 cups Parmigiano Reggiano, grated

4 cups Fontina cheese, grated

Lisa’s Ooey-Gooey Mushroom Lasagne Directions:

Sauté mushrooms in 4 tablespoons of butter, until they are soft. Season with 1/2 a teaspoon of sea salt and 1/2 a teaspoon of black pepper, when the mushrooms are fully cooked. Cook the pound and a half of lasagne for 6 minutes, until al dente. Rinse immediately in cold water and dry between cotton kitchen cloths.

In a deep dish lasagne pan, place a layer of the besciamella on the bottom. Place two layers of lasagne noodle, top with Besciamella, the sautéed mushrooms, the Fontina and the Parmigiano. Repeat until the top layer. Finish the top layer with Besciamella and Parmigiano cheese. Bake at 350 degree for 30 minutes.
