Lisa’s Ooey-Gooey Four Cheese Italian Mac & Cheese

When Lisa’s children were little, they loved this dish. Always insistent that her children eat healthy food on the Mediterranean diet, Lisa was very adverse to her children eating macaroni and cheese from a box or any other packaged food. But, like all children, Lisa’s three bambini would still have a craving for Mac & Cheese! Enter this recipe. With four Italian cheeses and hearty rigatoni pasta, it’s a treat that’s filling and total comfort. Lisa added the breadcrumbs on top for herself- she loves a crunch!

Lisa’s Ooey-Gooey Four Cheese Italian Mac & Cheese Ingredients: 

1 1/12 lbs Rigatoni

8 oz Fontina, shredded

8 oz Parmigiano Reggiano, grated

8 oz Pecorino Romano, grated

8 oz Mascarpone

1 cup whole milk

Lisa’s Ooey-Gooey Four Cheese Italian Mac & Cheese Directions: 

Place all cheeses in a deep pasta bowl. Prepare a deep dish, large casserole with two pads of melted butter on the bottom. Par boil the rigatoni for 7 minutes. Drain. Place the rigatoni in the bowl with the cheeses. Mix all the cheeses with the rigatoni, slowly pouring in the cup of milk. Add 1/2 teaspoon freshly grated black pepper if desired. Place in a prepared casserole. Sprinkle 1/4 of a cup of Italian breadcrumbs across the top of the pasta. Place 4 pads of butter on top of the breadcrumbs. Bake at 350 degrees for 18 minutes, then broil for 3-4 minutes until the top is golden and bubble. Serve.
